Spring is a season of new for me. It’s not my favorite season, but it is a very close second. I love the freshness of it all. The flowers, the birds, the coolness in the morning with the promise of warmth to come, it all makes me happy. And where fall (my absolute favorite) causes me to snuggle in and start to burrow, in spring I find myself excited to get out and create. We are a family that loves to garden (or try to) and we love making and revamping old and new recipes.
One of our family’s all-time favorites breakfasts any time of year is biscuits and chocolate gravy. In spring we add in-season berries and trade in the biscuits for beautiful crispy golden waffles. It’s a sometimes treat that I learned from my best friend’s mom growing up, she made the recipe any time I stayed over. As my kids have grown up, we have modified the recipe a bit and made it our own.

3 Tbsp Cocoa Powder (heaping)
1 Cup Brown Sugar (You can use white, but we have found that brown gives it an extra depth)
3 Tbsp All Purpose Flour
1 Tsp Cinnamon (optional)
2 Cups Milk
2 Tsp Vanilla Extract
3 Tbsp Butter
In a deep skillet or saucepan whisk together dry ingredients. Turn on heat to Medium high and slowly pour in milk, whisking slowly to blend the dry ingredients with the milk. Once fully incorporated add vanilla. Stir constantly until gravy thickens. Once thick remove from heat and stir in butter.
Serve gravy over fresh hot buttered biscuits or fresh waffles. We love adding berries or bananas to ours as well, but that may just be my way of feeling better about such a sugary breakfast!

Pro tip: room temperature eggs will give you higher peaks and fluffier waffles!
